2 large, baking apples (we use Jazz)
2 Tbs. water
2 tsp. cinnamon, divided
1 1/2 Tbs. butter or coconut oil, melted
2Tbs. coconut milk
1 Tbs. coconut flour
1/4 tsp. baking soda
Pinch sea salt
1. Preheat oven to 350 degrees Fahrenheit.
2. In a medium skillet, sauté the apples, water, and 1 1/2 teaspoons of the cinnamon until the apples are the consistency of apple pie filling. Allow to cool before combining with the egg mixture.
3. In a blender, add eggs, butter, coconut milk, coconut flour, 1/2 teaspoon of cinnamon, baking soda, and salt until well combined. Add the cooled apples. The blender will make this super fluffy. If you want it chunkier, do this step by hand in a medium-sized mixing bowl.
4. Pour mixture into greased 9-inch pie pan.
5. Bake for 40 minutes.
